Christmas Lemon Cupcakes

I love this time of year and have been really getting into the festive baking spirit recently. I have a long list of goodies I want to bake and with Christmas fast approaching, I better get a move on!

I think adding a little christmassy touch to simple recipes completely transforms a bake. And you can’t get any better than having cupcakes, gingerbread and candy canes all in one recipe!

First on my list of christmassy bakes were these cupcakes. They’d make the cutest gifts and with the process being super easy, there’s no excuse not to give them a try!

For the cupcakes, I used a really simple lemon cupcake recipe, piped on a little buttercream and to add that festive feel, I topped it off with these mini gingerbread men and these mini candy canes which I picked up from the supermarket.

The following ingredients are enough to make and decorate around 12 cupcakes (depending on size).

For the cupcakes:

You will need –

  • 125g Self Raising Flour
  • 125g Soft Butter
  • 125g Caster Sugar
  • 2 Eggs
  • 2 tbsp Milk
  • Finely Grated Zest of 1 Small Lemon

Step 1: Set the oven to 180°C/350°F/Gas Mark 4 and line a 12-hole muffin tin with cupcake cases.

Step 2: Mix together the butter and caster sugar until the mixture is pale and fluffy.

Step 3: Beat in the eggs and milk a little at a time, if the mixture looks slightly scrambled add in a spoonful of flour and mix.

Step 4: Sieve the flour into the mixture and fold through, being careful not to overmix.

Step 5: Stir through the lemon zest.

Step 6: Spoon the mixture into the paper cases until they are half full.

Step 6: Bake the cakes for 20/25 mins. Leave to cool in the tin for 5 minutes before transferring to cool
