Drizzled Cookies

Icicle laden cookies anyone? These cookies are perfect for those with a sweet tooth. The combination of the brown sugar with the chocolate chips is sure to give you that sugar rush that you so need in the run up to Christmas (it’s the one time of the month where the calories don’t count!) They’d make a great addition to the dining table and would look gorgeous on a centrepiece – ready for guests to devour when they arrive.

I simply drizzled on some white chocolate to add that Christmassy, snowflake feel but you can leave them as is if you want to go for more of a rustic look. Or alternatively, you can easily replace the chocolate chips with white chocolate or raisins depending on what you’re in the mood for. I bought a pack of Reeses peanut butter chips recently which I’d think would go brilliantly with this recipe too.

For these cookies, I used the following Waitrose recipe-

The following ingredients are enough to make around 24 cookies (depending on size).

You will need –

  • 110g unsalted butter, softened
  • 100g caster sugar
  • 60g light brown muscovado sugar
  • 1 egg
  • 1⁄2 tsp vanilla extract
  • 1⁄2 tsp salt
  • 1⁄2 tsp bicarbonate of soda
  • 190g plain flour
  • 150g plain chocolate, cut into chunks

Step 1: Cream together the butter and caster sugar until the mixture is pale and fluffy.

Step 2: Add the egg and vanilla extract and continue to beat until combined.

Step 3: Sieve the flour, salt and bicarbonate of soda into the mixture and fold through.

Step 4: Stir through the chocolate chunks. Cover with cling film and chill for at least 1 hour.

Step 5: Preheat the oven to 200 ̊c, gas mark 6 and line 2 baking trays with baking paper.

Step 6: Take 2 heaped teaspoons of the cookie dough and roll in your hands to make a ball. Place on the baking trays and flatten with the palm of your hand slightly.

Step 7: Repeat with the remaining dough.

Step 8: Bake for 10-12 minutes until the cookie is slightly golden. Cool for 5 minutes before transferring to a wire rack to cool completely.

Now all you need is a glass of milk, and I’m sure Santa will be pleasantly surprised when he climbs down the chimney to see these cookies!
