Jam tarts are one of those recipes that feel like they are so much harder to make than they actually are – probably due to the fact that a pastry is involved.

However, with a pastry that takes only minutes to prepare and a filling that is already pre-made, it honestly doesn’t entail as much effort as one would expect. And for those that want a cheat bake that requires even more minimal effort, then use shop bought pastry instead – no one will ever know the difference.

Cheats Banoffee Pie

I come armed with another cheat bake today, and one that’s even easier than my last! Following on from my previous post, I also whipped up these banoffee pots for my Valentine’s gathering.

I love making mini individual desserts, and think when creating a dessert table it makes it much more easier for guests to grab a dessert and go rather than having to cut it into separate pieces (there’s no time to waste when eating cake.)

Chocolate Mousse Cups

I had a very successful “no bake” baking weekend last weekend. I made a number of desserts from scratch which required no oven time at all. I was suddenly lumbered with throwing a very last minute Valentine’s party so needed to whip up some desserts which required minimal effort and time. Home made desserts in under 30 mins, what more could you want?

These cheat bakes are perfect for those that want to satisfy their baking craving (is that a thing?) but don’t want to spend hours baking and slaving over an oven.

Devil’s Food Cake

I’ve said it time and time again but I’ll say it again, I’m a sucker for chocolate based desserts. I lose all willpower when chocolate comes into the equation. My lose weight resolution goes out the window, my healthy eating motto disappears and before I know it I’ve got more chocolate cake stuffed down my throat than Bruce from Matilda.

So when I saw this Devil’s food cake recipe on Nigella’s website, I just could not resist. The sheer amount of chocolate had me salivating before I’d even begun baking. I’m not normally a massive fan of making sandwiched/tiered cakes, but since one of my new year goals was to venture out a little more with my baking, there was no way I couldn’t give this a go.

Hello 2016! Didn’t that come around awfully quickly?

I’m not one to normally look back and reflect but 2015 was a good one. Needless to say I had my fair share of ups and downs but I had some pretty awesome standout moments too. I managed to travel to 7 different countries, bag myself a new job and for the first time in my life, join the gym! But most importantly, I was most proud of my baking last year. I began to take it more seriously and really found myself enjoying it more. My favourite moment has to be finally having the courage (after 2 years of saying I will) to bake for my colleagues at work. This was something I never thought I’d be able to do but the positive feedback from family, friends and workmates really boosted my confidence and enabled me to bake more.
